Late June and early July mark the beginning of our garden zucchini harvest. By August, we have quite a few zucchinis staring at us from the ground. This can only mean one thing – zucchini bread.
Ingredients:
- 1/3 cup olive oil
- 3/4 cup shredded zucchini
- 2 large eggs, room temperature (or flax egg)
- 1/3 cup packed dark brown sugar
- 1 1/2 cups unbleached all-purpose flour
- 3 tablespoons honey
- 3/4 tsp kosher salt
- 3/4 tsp ground cinnamon
- 3 tablespoons honey
- 1/4 tsp allspice
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup crushed walnuts or another preferred nut
- 1/3 cup dried fruit (blueberries and goji berries are my favorites)
The above ingredients can be used to bake zucchini bread traditionally or through a bread machine. Combine ingredients accordingly and enjoy this summer treat.
