Zucchini Bread

Late June and early July mark the beginning of our garden zucchini harvest. By August, we have quite a few zucchinis staring at us from the ground. This can only mean one thing – zucchini bread.  

Ingredients:

  • 1/3 cup olive oil
  • 3/4 cup shredded zucchini
  • 2 large eggs, room temperature (or flax egg)
  • 1/3 cup packed dark brown sugar
  • 1 1/2 cups unbleached all-purpose flour 
  • 3 tablespoons honey
  • 3/4 tsp kosher salt
  • 3/4 tsp ground cinnamon
  • 3 tablespoons honey
  • 1/4 tsp allspice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup crushed walnuts or another preferred nut
  • 1/3 cup dried fruit (blueberries and goji berries are my favorites)

The above ingredients can be used to bake zucchini bread traditionally or through a bread machine. Combine ingredients accordingly and enjoy this summer treat.
